Say when you call if the work needs to happen outside trading hours. Anything that means shutting off water, taking fixtures out of service, or running a drain machine through a working kitchen is better scheduled overnight or on a closing day, and that changes how the visit is arranged.

Grease is the recurring one

In food premises, repeat drain blockages are usually an interceptor problem rather than a drain problem.

Fats leave the kitchen warm and liquid, then set as they cool further along the line, narrowing it until it closes. A grease interceptor exists to catch them before that happens. When it is undersized for the volume going through it, or overdue for servicing, grease passes straight through to the pipe beyond.

Clearing the line again restores flow and changes nothing about why it blocked. If a kitchen drain has been cleared more than once in a year, the interceptor is the thing to look at.
