Why do commercial drains block more often?

Volume and content. A commercial kitchen puts more water, more food waste and vastly more grease through a line in a day than a house does in a month, and washrooms in a busy premises see many times residential use. The pipe was often sized for that, but grease accumulation is cumulative: it coats the walls, narrows the bore and eventually catches everything passing. It is a maintenance problem rather than an accident.
